Ingredients:

  • 🐟 1 lb (450 g) firm white fish fillets (cod, halibut, or sea bass), cut into chunks
  • 🍅 4 ripe tomatoes, diced (or 1 can of diced tomatoes)
  • 🧄 3 cloves garlic, minced
  • 🧅 1 medium onion, finely chopped
  • 🥕 1 medium carrot, thinly sliced
  • 🌿 2 stalks celery, chopped
  • 🥔 1 medium potato, peeled and diced
  • 🌶️ 1/2 tsp red chili flakes (optional)
  • 🌱 1 tsp dried oregano
  • 🌿 1 tsp dried thyme
  • 🍋 Juice of 1 lemon
  • 🥣 4 cups fish or vegetable stock
  • 🧂 Salt and pepper to taste
  • 🌿 Fresh parsley or basil for garnish
  • 🥄 2 tbsp olive oil

Step-by-Step Instructions:

Add Lemon Juice and Serve
Stir in the lemon juice. Adjust seasoning if needed. Serve hot, garnished with fresh parsley or basil.

Sauté the Vegetables
Heat olive oil in a large pot over medium heat. Add the onion, garlic, carrot, and celery. Cook for 5 minutes until softened.

Add Tomatoes and Seasoning
Stir in the tomatoes, oregano, thyme, chili flakes, salt, and pepper. Cook for 3 minutes to release the flavors.

Simmer the Soup Base
Add the fish stock and diced potato. Bring to a boil, then reduce the heat to low and simmer for 15 minutes, or until the potato is tender.

Cook the Fish
Gently add the fish chunks to the pot. Simmer for 5–7 minutes until the fish is cooked through and flaky.
