  • 🐟 500g mixed fish (sea bass, cod, or snapper), cut into chunks
  • 🍤 300g shrimp, peeled and deveined
  • 🦑 200g squid, sliced into rings
  • 🍅 4 ripe tomatoes, chopped
  • 🧄 4 garlic cloves, minced
  • 🧅 1 large onion, finely chopped
  • 🌿 2 sprigs fresh thyme
  • 🌿 1 sprig fresh rosemary
  • 🍋 Zest of 1 lemon
  • 🌶️ 1 pinch of saffron threads
  • 🧂 Salt and pepper to taste
  • 🥖 Crusty bread, for serving

Step-by-Step Instructions:

Step 1: Sauté the Base

  1. Heat 2 tbsp olive oil in a large pot over medium heat.
  2. Add the minced garlic and chopped onion. Sauté until soft and fragrant.

Step 2: Build the Broth

  1. Add chopped tomatoes, thyme, rosemary, lemon zest, and saffron threads.
  2. Pour in 4 cups of fish stock or water. Season with salt and pepper.
  3. Simmer for 20 minutes to let the flavors meld.

Step 3: Cook the Seafood

  1. Gently add the fish chunks, shrimp, and squid to the pot.
  2. Simmer for 10-12 minutes until the seafood is fully cooked.

Step 4: Serve and Enjoy

Serve with crusty bread for dipping.

Ladle the stew into bowls.
