Beef and Barley Soup

Ingredients:
- 🥩 500g (1 lb) beef stew meat, cut into small cubes
- 🧅 1 large onion, diced
- 🥕 2 carrots, diced
- 🥔 2 medium potatoes, cubed
- 🌿 2 stalks celery, chopped
- 🌾 1/2 cup pearl barley, rinsed
- 🥛 6 cups beef or vegetable stock
- 🧄 2 cloves garlic, minced
- 🥄 1 tsp dried thyme
- 🥄 1 tsp dried rosemary
- 🌶️ 1/4 tsp black pepper
- 🧂 Salt to taste
- 🧈 2 tbsp olive oil
- 🌱 Fresh parsley for garnish

Instructions:
- Brown the beef:
🧈 Step 1: Heat olive oil in a large pot over medium-high heat. Add the beef cubes and sear them on all sides until browned. Remove and set aside. - Sauté the vegetables:
🧄 Step 2: In the same pot, sauté the onion, garlic, celery, and carrots for 3-4 minutes until softened. - Combine ingredients:
🥕 Step 3: Return the beef to the pot. Add the potatoes, pearl barley, thyme, rosemary, black pepper, and salt. Stir to combine. - Add stock and simmer:
🥣 Step 4: Pour in the beef or vegetable stock. Bring the soup to a boil, then reduce heat to low, cover, and simmer for 1 hour, stirring occasionally. - Check consistency:
