Beef and Barley Soup

Try This Easy Beef and Barley Soup today

Ingredients:

  • 🥩 500g (1 lb) beef stew meat, cut into small cubes
  • 🧅 1 large onion, diced
  • 🥕 2 carrots, diced
  • 🥔 2 medium potatoes, cubed
  • 🌿 2 stalks celery, chopped
  • 🌾 1/2 cup pearl barley, rinsed
  • 🥛 6 cups beef or vegetable stock
  • 🧄 2 cloves garlic, minced
  • 🥄 1 tsp dried thyme
  • 🥄 1 tsp dried rosemary
  • 🌶️ 1/4 tsp black pepper
  • 🧂 Salt to taste
  • 🧈 2 tbsp olive oil
  • 🌱 Fresh parsley for garnish

Preparation Time:

  • Prep: ⏱️ 15 minutes
  • Cooking: ⏱️ 1 hour 15 minutes
  • Total: ⏱️ 1 hour 30 minutes

Instructions:

  1. Brown the beef:
    🧈 Step 1: Heat olive oil in a large pot over medium-high heat. Add the beef cubes and sear them on all sides until browned. Remove and set aside.
  2. Sauté the vegetables:
    🧄 Step 2: In the same pot, sauté the onion, garlic, celery, and carrots for 3-4 minutes until softened.
  3. Combine ingredients:
    🥕 Step 3: Return the beef to the pot. Add the potatoes, pearl barley, thyme, rosemary, black pepper, and salt. Stir to combine.
  4. Add stock and simmer:
    🥣 Step 4: Pour in the beef or vegetable stock. Bring the soup to a boil, then reduce heat to low, cover, and simmer for 1 hour, stirring occasionally.
  5. Check consistency:
    🍲 Step 5: Once the barley is tender and the soup has thickened slightly, adjust the seasoning with more salt and pepper if needed.
  6. Serve:
    🍵 Step 6: Ladle the soup into bowls and garnish with fresh parsley.
