  • 🌼 2 cups cauliflower florets
  • 🧅 1 medium onion (chopped)
  • 🧄 3 garlic cloves (minced)
  • 🥔 1 medium potato (peeled and cubed)
  • 🫒 2 tbsp olive oil or butter
  • 🥣 4 cups vegetable broth
  • 🥛 1/2 cup cream or coconut milk (optional, for creaminess)
  • 🧂 Salt and pepper (to taste)

For Garnish:

  • 🌿 Chopped fresh parsley
  • 🧀 Grated Parmesan cheese (optional)

Step-by-Step Instructions:

1. Prepare the Vegetables:

  • Wash and chop broccoli, cauliflower, and potato.
  • Set aside.

2. Sauté Aromatics:

  • Heat olive oil or butter in a large pot over medium heat.
  • Add onion and garlic, and sauté until soft and fragrant (about 3 minutes).

3. Cook the Vegetables:

  • Add the broccoli, cauliflower, and potato to the pot.
  • Pour in the vegetable broth and bring to a boil.
  • Reduce the heat and simmer for 20 minutes, or until the vegetables are tender.

4. Blend the Soup:

  • Remove the pot from heat and let cool slightly.
  • Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.

5. Add Creaminess:

  • Return the soup to the pot and stir in cream or coconut milk (if using).
  • Reheat gently and season with salt and pepper to taste.
