Chicken Pudding in Broth
Budino di pollo in brodo is a traditional Italian dish consisting of chicken mousse in broth.

Ingredients :
- 🐔 2 chicken breasts, boiled and shredded
- 🥣 6 cups chicken broth
- 🍚 1/2 cup rice, cooked
- 🧅 1 small onion, finely chopped
- 🧄 2 garlic cloves, minced
- 🧈 2 tablespoons butter
- 🧂 Salt and pepper to taste
- 🌿 Fresh parsley for garnish
- 🥚 2 large eggs
- 🧀 1/4 cup Parmesan cheese, grated

- ⏳ Total Time: 40 minutes
Instructions:
- Prepare the rice:
- Cook the rice in a pot of water until fully cooked and set aside.
- Prepare the broth:
- In a large pot, heat the butter and sauté the onion and garlic until softened and fragrant. Add the chicken broth and bring to a boil.
- Combine ingredients:
- Add the cooked rice, shredded chicken, and Parmesan cheese to the broth. Stir well and let it simmer for 10 minutes.
- Prepare the eggs:
- Beat the eggs and slowly add them to the simmering broth, stirring continuously to create a creamy consistency. Season with salt and pepper.
- Serve:
- Once the eggs have formed a pudding-like texture, serve the soup in bowls, garnishing with fresh parsley.
