Chicken Pudding in Broth

Budino di pollo in brodo is a traditional Italian dish consisting of chicken mousse in broth.

Ingredients :

  • 🐔 2 chicken breasts, boiled and shredded
  • 🥣 6 cups chicken broth
  • 🍚 1/2 cup rice, cooked
  • 🧅 1 small onion, finely chopped
  • 🧄 2 garlic cloves, minced
  • 🧈 2 tablespoons butter
  • 🧂 Salt and pepper to taste
  • 🌿 Fresh parsley for garnish
  • 🥚 2 large eggs
  • 🧀 1/4 cup Parmesan cheese, grated

Timing :

  • 🕒 Prep Time: 10 minutes
  • 🍲 Cook Time: 30 minutes
  • ⏳ Total Time: 40 minutes

Instructions:

  1. Prepare the rice:
    • Cook the rice in a pot of water until fully cooked and set aside.
  2. Prepare the broth:
    • In a large pot, heat the butter and sauté the onion and garlic until softened and fragrant. Add the chicken broth and bring to a boil.
  3. Combine ingredients:
    • Add the cooked rice, shredded chicken, and Parmesan cheese to the broth. Stir well and let it simmer for 10 minutes.
  4. Prepare the eggs:
    • Beat the eggs and slowly add them to the simmering broth, stirring continuously to create a creamy consistency. Season with salt and pepper.
  5. Serve:
    • Once the eggs have formed a pudding-like texture, serve the soup in bowls, garnishing with fresh parsley.
