Ingredients :

  • 🧀 1 cup queso fresco or farmer’s cheese, cubed
  • 🥔 3 medium potatoes, peeled and diced
  • 🧅 1 small onion, chopped
  • 🌶️ 1-2 jalapeño peppers, chopped (optional for heat)
  • 🍅 2 tomatoes, chopped
  • 🌽 1 cup corn kernels (fresh or frozen)
  • 🧄 2 garlic cloves, minced
  • 🧂 Salt and pepper to taste
  • 🧈 2 tablespoons butter
  • 🍲 6 cups vegetable or chicken broth
  • 🌿 Fresh cilantro for garnish

Instructions:

  1. Prepare the vegetables:
    • In a large pot, heat the butter over medium heat. Add the onions, garlic, and jalapeño peppers (if using), sautéing until softened and fragrant.
  2. Add the broth and potatoes:
    • Add the chopped potatoes, tomatoes, and corn to the pot. Pour in the broth and bring the mixture to a boil. Let it simmer for about 15 minutes or until the potatoes are tender.
  3. Add the cheese:
    • Stir in the cubed cheese, allowing it to melt into the soup. Season with salt and pepper to taste.
  4. Garnish and serve:
    • Once the cheese is melted and the soup is creamy, remove from heat and serve in bowls. Garnish with fresh cilantro.
