Ingredients:
- 🐟 1 lb (450 g) fresh fish fillets (snapper, grouper, or cod)
- 🥔 2 medium potatoes, diced
- 🥕 2 medium carrots, sliced
- 🌽 1 cup fresh or frozen corn kernels
- 🍠 1 cup diced sweet potato or yam
- 🥥 1 can (400 ml) coconut milk
- 🍅 2 medium tomatoes, diced
- 🌿 2 stalks scallions, chopped
- 🌶️ 1 scotch bonnet pepper (whole)
- 🌿 1 sprig thyme
- 🥣 6 cups fish stock or water
- 🧄 2 cloves garlic, minced
- 🧅 1 medium onion, chopped
- 🧂 Salt and pepper to taste
- 🍋 Juice of 1 lime
- 🥄 2 tbsp vegetable oil

Remove the scotch bonnet pepper before serving. Ladle the soup into bowls and garnish with additional scallions or fresh thyme if desired.
Prepare the Aromatics
Heat the vegetable oil in a large pot over medium heat. Sauté the onion, garlic, and scallions until fragrant, about 3 minutes.
Add Vegetables and Stock
Add the diced potatoes, sweet potatoes, carrots, corn, and tomatoes. Pour in the fish stock or water. Add the thyme sprig and bring to a boil.
Simmer the Soup
Reduce the heat to low and simmer for 20 minutes, or until the root vegetables are tender.
