Chicken and Barley Soup

Ingredients:
- 🍗 500g (1 lb) boneless, skinless chicken breast or thighs, diced
- 🧅 1 large onion, chopped
- 🥕 2 carrots, diced
- 🌾 1/2 cup pearl barley, rinsed
- 🥔 2 medium potatoes, cubed
- 🌿 2 stalks celery, chopped
- 🧄 2 cloves garlic, minced
- 🥛 6 cups chicken or vegetable stock
- 🥄 1 tsp dried thyme
- 🥄 1 tsp dried oregano
- 🌶️ 1/4 tsp black pepper
- 🧂 Salt to taste
- 🧈 2 tbsp olive oil
- 🌱 Fresh parsley for garnish

Instructions:
- Cook the chicken:
🧈 Step 1: Heat olive oil in a large pot over medium heat. Add the diced chicken and cook until browned on all sides, about 5-7 minutes. Remove and set aside. - Sauté the aromatics:
🧄 Step 2: In the same pot, sauté the onion, garlic, celery, and carrots for 4-5 minutes until softened. - Add vegetables, barley, and seasonings:
