Ingredients:

  • 🍗 500g (1 lb) boneless, skinless chicken breast or thighs, diced
  • 🧅 1 large onion, chopped
  • 🧄 3 cloves garlic, minced
  • 🥕 2 carrots, diced
  • 🥔 2 medium potatoes, cubed
  • 🌿 2 stalks celery, chopped
  • 🥬 1 cup spinach or kale, chopped
  • 🍅 2 medium tomatoes, diced
  • 🌽 1 cup green beans, cut into 1-inch pieces
  • 🥛 6 cups chicken or vegetable stock
  • 🥄 1 tsp dried thyme
  • 🥄 1 tsp dried oregano
  • 🌶️ 1/4 tsp black pepper
  • 🧂 Salt to taste
  • 🧈 2 tbsp olive oil
  • 🍋 2 tbsp fresh lemon juice
  • 🌱 Fresh parsley for garnish

Preparation Time:

  • Cooking: ⏱️ 35 minutes
  • Total: ⏱️ 50 minutes

Instructions:

  1. Cook the chicken:
    🧈 Step 1: Heat olive oil in a large pot over medium heat. Add the diced chicken and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
  2. Sauté the aromatics:
    🧄 Step 2: In the same pot, sauté the onion and garlic for 3-4 minutes until fragrant.
  3. Add vegetables and herbs:
    🥕 Step 3: Stir in the carrots, potatoes, celery, and green beans. Add thyme, oregano, and black pepper. Cook for 5 minutes, stirring occasionally.
  4. Simmer the soup:
    🥣 Step 4: Pour in the chicken or vegetable stock. Add the tomatoes and cooked chicken back to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the vegetables are tender.
  5. Add greens and lemon juice:
    🥬 Step 5: Stir in the spinach or kale and cook for 2-3 minutes until wilted. Add lemon juice and adjust salt to taste.
  6. Serve:
