Ingredients:
- 🍗 500g (1 lb) boneless, skinless chicken breast or thighs, diced
- 🧅 1 large onion, chopped
- 🥕 2 carrots, diced
- 🥔 2 medium potatoes, cubed
- 🌿 2 stalks celery, chopped
- 🌽 1 cup corn kernels (fresh, frozen, or canned)
- 🥬 1 cup spinach or kale, chopped
- 🧄 2 cloves garlic, minced
- 🥛 6 cups chicken or vegetable stock
- 🥄 1 tsp dried thyme
- 🥄 1 tsp dried basil
- 🥄 1/2 tsp black pepper
- 🧂 Salt to taste
- 🧈 2 tbsp olive oil
- 🍋 2 tbsp fresh lemon juice
- 🌱 Fresh parsley for garnish
Preparation Time:
- Prep: ⏱️ 15 minutes
- Cooking: ⏱️ 40 minutes
- Total: ⏱️ 55 minutes
Instructions:
- Cook the chicken:
🧈 Step 1: Heat olive oil in a large pot over medium heat. Add the diced chicken and cook until browned on all sides, about 5-7 minutes. Remove and set aside. - Sauté the vegetables:
🧄 Step 2: In the same pot, sauté the onion, garlic, carrots, celery, and potatoes for 3-4 minutes until they begin to soften. - Add stock and seasonings:
🍲 Step 3: Pour in the chicken or vegetable stock. Stir in the thyme, basil, black pepper, and salt to taste. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the vegetables are tender. - Add corn, chicken, and greens:
🌽 Step 4: Add the corn, cooked chicken, and spinach or kale to the soup. Continue to cook for another 5-7 minutes until the greens are wilted and the chicken is heated through. - Finish with lemon juice:
🍋 Step 5: Stir in the fresh lemon juice and adjust salt and pepper if necessary. - Serve:
