🍲 Ingredients

  • 🐓 Chicken breast or thighs: 2, boneless and skinless
  • 🥕 Carrots: 2, diced
  • 🧅 Onion: 1, chopped
  • 🥬 Celery stalks: 2, sliced
  • 🌿 Garlic: 2 cloves, minced
  • 🍲 Pearl barley: 1/2 cup
  • 🥣 Chicken broth: 6 cups
  • 🌱 Bay leaf: 1
  • 🧂 Salt and pepper: To taste
  • 🫛 Parsley: Fresh, chopped (for garnish)

How to Prepare Chicken Barley Soup

Step 1: Prepare the Ingredients

  1. Chop the vegetables and mince the garlic.
  2. Rinse the barley under cold water.

Step 2: Sauté Vegetables

  1. Heat a large pot over medium heat. Add 1 tbsp of olive oil.
  2. Sauté onions, carrots, and celery until softened (about 5 minutes).
  3. Add garlic and cook for another minute.

Step 3: Cook Chicken and Barley

  1. Add chicken broth, barley, bay leaf, and chicken to the pot.
  2. Bring to a boil, then reduce heat to a simmer. Cover and cook for 30 minutes.

Step 4: Shred the Chicken

  1. Remove chicken from the pot and shred with two forks.
  2. Return the shredded chicken to the soup and continue cooking for 10 minutes.

Step 5: Season and Serve

  1. Season with salt and pepper to taste.
  2. Garnish with fresh parsley and serve hot.
