- 🥕 Carrots: 2, diced
- 🧅 Onion: 1, chopped
- 🥬 Celery stalks: 2, sliced
- 🌿 Garlic: 2 cloves, minced
- 🍲 Pearl barley: 1/2 cup
- 🥣 Chicken broth: 6 cups
- 🌱 Bay leaf: 1
- 🧂 Salt and pepper: To taste
- 🫛 Parsley: Fresh, chopped (for garnish)
How to Prepare Chicken Barley Soup
Step 1: Prepare the Ingredients
- Chop the vegetables and mince the garlic.
- Rinse the barley under cold water.
Step 2: Sauté Vegetables
- Heat a large pot over medium heat. Add 1 tbsp of olive oil.
- Sauté onions, carrots, and celery until softened (about 5 minutes).
- Add garlic and cook for another minute.
Step 3: Cook Chicken and Barley
- Add chicken broth, barley, bay leaf, and chicken to the pot.
