Ingredients:

Vegetables and Base:

  • 🧅 1 medium onion (chopped)
  • 🥕 2 carrots (diced)
  • 🥬 2 celery stalks (diced)
  • 🧄 3 garlic cloves (minced)

Split Peas and Broth:

  • 🌱 1 1/2 cups dried green split peas (rinsed and sorted)
  • 🥣 6 cups vegetable or chicken broth

Seasoning and Herbs:

  • 🌿 1 tsp dried thyme
  • 🌱 1 bay leaf
  • 🧂 Salt and pepper (to taste)

Optional Additions:

  • 🥓 1 cup diced smoked turkey or beef (optional)

Garnishes:

  • 🌿 Fresh parsley (chopped)
  • 🍞 Croutons or crusty bread

Step-by-Step Instructions:

1. Sauté the Vegetables:

  • Heat 2 tbsp olive oil in a large pot over medium heat.
  • Add onion, carrots, celery, and garlic. Cook for 5–7 minutes until softened.

2. Add Peas, Broth, and Seasoning:

  • Stir in the split peas, broth, thyme, and bay leaf.
  • If using smoked turkey or beef, add it now.

3. Simmer the Soup:

  • Bring the mixture to a boil, then reduce the heat to low.
  • Cover and simmer for 1 hour, stirring occasionally to prevent sticking.

4. Blend for Creaminess (Optional):

  • Remove the bay leaf. For a creamier texture, use an immersion blender to puree part of the soup, or transfer half to a blender and return it to the pot.
5. Adjust Seasoning and Serve:
  • Taste and adjust seasoning with salt and pepper.
  • Serve hot, garnished with parsley and croutons or bread on the side.
