Split Peas and Broth:
- 🌱 1 1/2 cups dried green split peas (rinsed and sorted)
- 🥣 6 cups vegetable or chicken broth
Seasoning and Herbs:
- 🌿 1 tsp dried thyme
- 🌱 1 bay leaf
- 🧂 Salt and pepper (to taste)
Optional Additions:
- 🥓 1 cup diced smoked turkey or beef (optional)
Garnishes:
- 🌿 Fresh parsley (chopped)
- 🍞 Croutons or crusty bread
Step-by-Step Instructions:
1. Sauté the Vegetables:
- Heat 2 tbsp olive oil in a large pot over medium heat.
- Add onion, carrots, celery, and garlic. Cook for 5–7 minutes until softened.
2. Add Peas, Broth, and Seasoning:
- Stir in the split peas, broth, thyme, and bay leaf.
- If using smoked turkey or beef, add it now.
3. Simmer the Soup:
- Bring the mixture to a boil, then reduce the heat to low.
- Cover and simmer for 1 hour, stirring occasionally to prevent sticking.
4. Blend for Creaminess (Optional):
- Remove the bay leaf. For a creamier texture, use an immersion blender to puree part of the soup, or transfer half to a blender and return it to the pot.
5. Adjust Seasoning and Serve:
- Taste and adjust seasoning with salt and pepper.
- Serve hot, garnished with parsley and croutons or bread on the side.
