Ingredients:

  • 🥦 1 head of broccoli (cut into florets)
  • 🌼 1/2 head of cauliflower (cut into florets)
  • 🧅 1 medium onion (chopped)
  • 🧄 2 garlic cloves (minced)
  • 🥣 4 cups vegetable broth
  • 🥛 1 cup milk or plant-based milk
  • 🫒 2 tbsp olive oil or butter
  • 🧂 Salt and pepper (to taste)
  • 🧀 1/2 cup grated Parmesan cheese (optional)

For Garnish:

  • 🌿 Fresh parsley (chopped)
  • 🍞 Croutons

Step-by-Step Instructions:

1. Sauté the Vegetables:

  • Heat olive oil or butter in a large pot over medium heat.
  • Add onion and garlic, sauté until softened and fragrant (about 3 minutes).

2. Cook the Broccoli and Cauliflower:

  • Add broccoli and cauliflower florets to the pot.
  • Pour in the vegetable broth, bring to a boil, then reduce to a simmer.
  • Cover and cook for 15–20 minutes, or until the vegetables are tender.

3. Blend the Soup:

  • Use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, transfer the soup to a blender and blend in batches.

4. Add Creaminess:

  • Stir in the milk and Parmesan cheese (if using).
  • Simmer for another 5 minutes, and adjust seasoning with salt and pepper.

5. Serve:

  • Ladle the soup into bowls, garnish with fresh parsley and croutons, and serve warm.
