- 🌼 1/2 head of cauliflower (cut into florets)
- 🧅 1 medium onion (chopped)
- 🧄 2 garlic cloves (minced)
- 🥣 4 cups vegetable broth
- 🥛 1 cup milk or plant-based milk
- 🫒 2 tbsp olive oil or butter
- 🧂 Salt and pepper (to taste)
- 🧀 1/2 cup grated Parmesan cheese (optional)
For Garnish:
- 🌿 Fresh parsley (chopped)
- 🍞 Croutons
Step-by-Step Instructions:
1. Sauté the Vegetables:
- Heat olive oil or butter in a large pot over medium heat.
- Add onion and garlic, sauté until softened and fragrant (about 3 minutes).
2. Cook the Broccoli and Cauliflower:
- Add broccoli and cauliflower florets to the pot.
- Pour in the vegetable broth, bring to a boil, then reduce to a simmer.
- Cover and cook for 15–20 minutes, or until the vegetables are tender.
3. Blend the Soup:
- Use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, transfer the soup to a blender and blend in batches.
4. Add Creaminess:
- Stir in the milk and Parmesan cheese (if using).
- Simmer for another 5 minutes, and adjust seasoning with salt and pepper.
5. Serve:
