  • 🥔 1 medium potato (peeled and diced, for extra creaminess)
  • 🧄 2 cloves garlic (minced)
  • 🥫 4 cups vegetable or chicken broth
  • 🥛 1 cup milk or heavy cream (for extra creaminess, optional)
  • 🌿 1 tsp dried thyme or your favorite herbs
  • 🧂 Salt and pepper to taste
  • 🧈 1 tbsp olive oil or butter

🥣 Instructions:

  1. Prepare the Base:
    Heat olive oil or butter in a large pot over medium heat. Add the diced onion and garlic, and sauté until fragrant and translucent (about 3-4 minutes).
  2. Add Vegetables:
    Add the cauliflower, carrot, and potato to the pot. Stir well and cook for 5 minutes.
  3. Simmer:
    Pour in the broth and add thyme. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 20 minutes, or until the vegetables are tender.
  4. Blend:
    Use an immersion blender to puree the soup directly in the pot until smooth. If you don’t have one, carefully transfer the soup to a blender in batches, then return it to the pot.
  5. Add Creaminess:
    Stir in the milk or heavy cream. Adjust the seasoning with salt and pepper. Warm the soup gently for another 2-3 minutes, but don’t let it boil.
