Ingredients:
- 🦞 2 lobster tails (about 400g total)
- 🧅 1 medium onion, chopped
- 🥕 1 medium carrot, chopped
- 🌱 1 celery stalk, chopped
- 🍅 2 tbsp tomato paste
- 🥛 4 cups seafood stock (or chicken stock)
- 🥄 1/2 cup heavy cream
- 🧄 2 cloves garlic, minced
- 🌶️ 1 tsp paprika
- 🍋 1 tsp lemon juice
- 🧂 Salt and pepper to taste
- 🧈 3 tbsp butter
- 🫙 2 tbsp flour (for thickening)

Instructions:
- Cook the lobster:
🦞 Step 1: Bring a pot of salted water to a boil. Add the lobster tails and cook for 5-7 minutes until the shells turn bright red. Remove and set aside to cool. Once cooled, remove the meat from the shells and chop into bite-sized pieces. Reserve the shells. - Sauté the vegetables:
🧈 Step 2: In a large pot, melt 2 tbsp butter over medium heat. Add the chopped onion, carrot, celery, and garlic. Sauté for 5 minutes until softened. - Add tomato paste and spices:
🍅 Step 3: Stir in the tomato paste and paprika. Cook for 1 minute, mixing well. - Simmer with stock and shells:
🥛 Step 4: Add the seafood stock and the reserved lobster shells. Bring to a boil, reduce the heat, and simmer for 20 minutes to infuse the soup with the lobster flavor. - Blend and strain:
🥄 Step 5: Remove the shells and use an immersion blender to puree the soup until smooth. Strain through a fine-mesh sieve for a velvety texture. - Thicken the soup:
