🍲 Ingredients:

  1. 🍅 Fresh Tomatoes – 6 large, peeled and chopped
  2. 🧅 Onion – 1 medium, finely chopped
  3. 🧄 Garlic – 2 cloves, minced
  4. 🥫 Tomato Paste – 2 tablespoons
  5. 🥛 Heavy Cream – 1 cup
  6. 🥫 Vegetable Stock – 3 cups
  7. 🌿 Fresh Basil – 1/2 cup, chopped + extra for garnish
  8. 🫒 Olive Oil – 2 tablespoons
  9. 🧂 Salt & Pepper – to taste
  10. 🍞 Croutons – optional, for serving

Instructions

  1. Prepare Ingredients
    🧑‍🍳 Peel and chop the tomatoes. Dice the onion and mince the garlic.
  2. Sauté Aromatics
    🍳 Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until fragrant and translucent (about 3 minutes).
  3. Add Tomatoes and Tomato Paste
    🍅 Stir in the fresh tomatoes and tomato paste. Cook for 5 minutes, allowing the flavors to combine.
  4. Pour in Stock
    🥫 Add the vegetable stock to the pot. Season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 15 minutes.
  5. Blend the Soup
    🥣 Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender in batches.
  6. Add Cream and Basil
    🥛 Stir in the heavy cream and chopped basil. Simmer for 5 more minutes on low heat.
  7. Garnish and Serve
    🌿 Ladle the soup into bowls, garnish with fresh basil, and serve with croutons or crusty bread.
