Ingredients

  • 🥄 1 cup brown lentils, rinsed
  • 🧅 1 medium onion, finely chopped
  • 🥕 1 carrot, diced
  • 🌿 2 cloves garlic, minced
  • 🍅 1 cup crushed tomatoes (or fresh tomatoes, grated)
  • 🌿 2 bay leaves
  • 🌿 1 tsp dried oregano
  • 🥄 1/4 cup olive oil
  • 🧂 Salt and pepper, to taste
  • 💧 4 cups water or vegetable broth
  • 🍋 Lemon wedges (for serving)
  • 🍞 Optional: Crusty bread for dipping

How to Prepare Fakes (Greek Lentil Soup)

Step 1: Prep the Lentils

  1. Rinse the lentils thoroughly under cold water. Set aside.

Step 2: Sauté the Vegetables

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, and carrot. Sauté until the onion is soft and translucent, about 5 minutes.

Step 3: Simmer the Soup

  1. Stir in the lentils, bay leaves, oregano, and crushed tomatoes.
  2. Add the water or vegetable broth, and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 30-35 minutes, or until the lentils are tender.

Step 4: Season and Serve

  1. Remove the bay leaves.
  2. Season the soup with salt and pepper to taste.
  3. Serve hot, drizzled with olive oil and accompanied by lemon wedges for added flavor.
