🍴 Ingredients:

  1. 🥩 500g (1 lb) beef shank or beef with bone
  2. 🥕 2 medium carrots, sliced
  3. 🌱 1 parsley root, sliced (optional)
  4. 🧅 1 medium onion, peeled and halved
  5. 🥬 2 celery stalks or 1 celery root, chopped
  6. 🥔 2 medium potatoes, diced
  7. 🧄 2 garlic cloves, peeled
  8. 🌿 1 bay leaf
  9. 🌿 1 tsp black peppercorns
  10. 🧂 Salt to taste
  11. 💧 2 liters (8 cups) water

🥣 Instructions:

  1. Prepare the Beef:
    • Rinse the beef and place it in a large pot. Add the water and bring it to a boil.
    • Skim off any foam that forms on the surface.
  2. Add Vegetables:
    • Add carrots, parsley root, onion, celery, potatoes, and garlic to the pot.
  3. Season the Soup:
    • Add the bay leaf, peppercorns, and salt.
  4. Simmer the Soup:
    • Reduce the heat to low, cover, and let it simmer for about 2 hours until the beef is tender and the flavors have melded.
  5. Strain and Serve:
    • Remove the beef and vegetables from the pot. Strain the broth if desired for a clearer soup.
    • Shred the beef into bite-sized pieces and add it back to the soup.
  6. Optional Garnishes:
    • Sprinkle with fresh parsley or chives before serving.
