Lemongrass Shrimp Soup

Ingredients:
- 🍤 500g (1 lb) shrimp, peeled and deveined
- 🌿 2 stalks lemongrass, bruised and chopped into 2-inch pieces
- 🧅 1 medium onion, sliced
- 🧄 2 cloves garlic, minced
- 🥕 1 medium carrot, julienned
- 🍅 2 medium tomatoes, diced
- 🌽 1 cup baby corn (or regular corn kernels)
- 🥬 1 cup bok choy or spinach, chopped
- 🥛 4 cups vegetable or seafood stock
- 🍋 2 tbsp fresh lime juice
- 🧂 Salt and pepper to taste
- 🌿 Fresh cilantro or green onions for garnish
- 🧈 2 tbsp olive oil
Preparation Time:

- Cooking: ⏱️ 20 minutes
- Total: ⏱️ 30 minutes
Instructions:
- Prepare the base:
🧈 Step 1: Heat olive oil in a large pot over medium heat. Sauté onion, garlic, and lemongrass for 3-4 minutes until fragrant. - Add vegetables:
🥕 Step 2: Add carrots, tomatoes, and baby corn to the pot. Stir well and cook for 5 minutes. - Add stock and simmer:
🥣 Step 3: Pour in the vegetable or seafood stock. Bring to a boil, then reduce heat and let it simmer for 10 minutes. - Cook the shrimp:
🍤 Step 4: Add the shrimp and cook for 3-5 minutes, or until they turn pink and opaque. - Finish with greens and lime:
🥬 Step 5: Add bok choy or spinach and cook for 2 minutes until wilted. Stir in lime juice and adjust seasoning with salt and pepper. - Serve:
🍵 Step 6: Serve hot, garnished with fresh cilantro or green onions.
