  • 🧅 1 medium onion, finely chopped
  • 🥕 1 medium carrot, finely diced
  • 🥔 1 medium potato, peeled and diced
  • 🧄 2 cloves garlic, minced
  • 🍅 1 medium tomato, diced
  • 🥣 4 cups lobster or seafood stock
  • 🥥 1 cup coconut milk (optional for a creamy version)
  • 🌿 1 tsp fresh thyme leaves
  • 🌿 1 bay leaf
  • 🌶️ 1 pinch cayenne pepper (optional)
  • 🧂 Salt and black pepper to taste
  • 🍋 Juice of 1/2 lemon
  • 🥄 2 tbsp olive oil or butter
  • 🌿 Fresh parsley or chives for garnish

Step-by-Step Instructions:

Serve
Ladle the soup into bowls and garnish with fresh parsley or chives. Serve with crusty bread or oyster crackers.

Sauté Aromatics
Heat olive oil or butter in a large pot over medium heat. Sauté the onion, garlic, and carrot until soft and fragrant, about 5 minutes.

Add Stock and Vegetables
Stir in the diced potato, tomato, thyme, and bay leaf. Pour in the lobster or seafood stock. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the potato is tender.

Blend the Base
For a smooth base, remove the bay leaf and use an immersion blender to puree the soup. You can also leave it chunky for a more rustic texture.

Add Lobster and Cream
Stir in the cooked lobster meat and coconut milk (if using). Simmer gently for 5–10 minutes, allowing the flavors to meld.

Season and Finish
Add cayenne pepper, salt, black pepper, and lemon juice to taste.
