- 🫑 1 red bell pepper (chopped)
- 🥕 2 medium carrots (sliced)
- 🫘 1 cup cooked black beans or pinto beans
Broth and Grains:
- 🥣 6 cups chicken or vegetable broth
- 🌽 1 cup fresh or frozen corn kernels
- 🌾 1/2 cup rice
Spices and Herbs:
- 🌶️ 1 tsp chili powder
- 🌶️ 1/2 tsp ground cumin
- 🌿 1 tsp dried oregano
- 🧂 Salt and pepper (to taste)
Optional Toppings:
- 🥑 Sliced avocado
- 🧀 Grated cheese (optional, for non-vegan)
- 🌿 Fresh cilantro
- 🍋 Lime wedges
Step-by-Step Instructions:
1. Sauté the Aromatics:
- Heat a large pot over medium heat and add 2 tbsp of olive oil.
- Sauté the onion and garlic until fragrant and softened (about 3–4 minutes).
2. Add Vegetables and Spices:
- Stir in tomatoes, red bell pepper, and carrots.
- Sprinkle in chili powder, cumin, and oregano, stirring to combine. Cook for 5 minutes.
3. Add Broth, Rice, and Beans:
- Pour in the broth and bring to a gentle boil.
- Add the rice and cooked beans. Reduce heat to low and simmer for 20–25 minutes, stirring occasionally.
4. Add Corn and Final Seasoning:
- Stir in the corn and cook for another 10 minutes until the rice is tender and the soup is thickened.
- Season with salt and pepper to taste.
