Lentils and Broth:
- 🥣 1 cup green or brown lentils (rinsed)
- 🥫 5 cups vegetable broth
Spices and Flavorings:
- 🧄 3 garlic cloves (minced)
- 🌿 1 tsp ground cumin
- 🌶️ 1/2 tsp smoked paprika
- 🍋 Juice of 1 lemon
- 🧂 Salt and pepper (to taste)
- 🫒 2 tbsp olive oil
Toppings (Optional):
- 🌿 Fresh parsley (chopped)
- 🥄 Plain Greek yogurt or sour cream
Step-by-Step Instructions:
1. Prepare the Base:
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion, garlic, and carrots. Sauté for 3–4 minutes until fragrant and softened.
2. Add Lentils and Vegetables:
- Stir in the diced tomatoes, zucchini, and potato.
- Add the lentils and mix everything well.
3. Add Spices and Broth:
- Sprinkle cumin and smoked paprika over the mixture.
- Pour in the vegetable broth and stir.
4. Simmer:
- Bring to a boil, then reduce the heat to low.
