Ingredients:

Vegetables:

  • 🧅 1 medium onion (chopped)
  • 🥕 2 carrots (chopped)
  • 🍅 2 large tomatoes (diced)
  • 🥬 1 zucchini (diced)
  • 🥔 1 medium potato (peeled and diced)

Lentils and Broth:

  • 🥣 1 cup green or brown lentils (rinsed)
  • 🥫 5 cups vegetable broth

Spices and Flavorings:

  • 🧄 3 garlic cloves (minced)
  • 🌿 1 tsp ground cumin
  • 🌶️ 1/2 tsp smoked paprika
  • 🍋 Juice of 1 lemon
  • 🧂 Salt and pepper (to taste)
  • 🫒 2 tbsp olive oil

Toppings (Optional):

  • 🌿 Fresh parsley (chopped)
  • 🥄 Plain Greek yogurt or sour cream

Step-by-Step Instructions:

1. Prepare the Base:

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion, garlic, and carrots. Sauté for 3–4 minutes until fragrant and softened.

2. Add Lentils and Vegetables:

  • Stir in the diced tomatoes, zucchini, and potato.
  • Add the lentils and mix everything well.

3. Add Spices and Broth:

  • Sprinkle cumin and smoked paprika over the mixture.
  • Pour in the vegetable broth and stir.

4. Simmer:

  • Bring to a boil, then reduce the heat to low.
  • Cover and let simmer for 25–30 minutes, or until the lentils and vegetables are tender.

5. Add Lemon Juice:

  • Stir in the lemon juice to brighten the flavors.
  • Season with salt and pepper to taste.

6. Serve:

  • Ladle the soup into bowls and garnish with fresh parsley or a dollop of Greek yogurt for added creaminess.
