🛒 Ingredients:

  • 🥣 Black Beans: 3 cups (cooked or canned, drained and rinsed)
  • 🧅 Onion: 1 medium, diced
  • 🧄 Garlic: 3 cloves, minced
  • 🌶️ Jalapeño: 1, seeded and minced (optional for spice)
  • 🍅 Tomatoes: 2 medium, diced (or 1 cup canned diced tomatoes)
  • 🌿 Cilantro: 1/2 cup, chopped
  • 🥤 Vegetable Broth: 4 cups
  • 🌽 Corn Kernels: 1 cup (fresh, frozen, or canned)
  • 🫒 Olive Oil: 2 tbsp
  • 🧂 Cumin Powder: 1 tsp
  • 🌶️ Chili Powder: 1/2 tsp
  • 🧂 Salt and Pepper: To taste
  • 🍋 Lime Juice: 2 tbsp (plus extra for serving)

Optional Toppings:

  • 🥑 Sliced Avocado
  • 🌮 Crispy Tortilla Strips
  • 🧀 Shredded Cheese
  • 🌶️ Hot Sauce

🕒 Instructions:

  1. Sauté the Base (⏱️ 5 min):
    Heat 🫒 olive oil in a large pot over medium heat. Add 🧅 onion, 🧄 garlic, and 🌶️ jalapeño (if using) and sauté until fragrant.
  2. Build the Soup (⏱️ 5 min):
    Stir in 🧂 cumin powder and 🌶️ chili powder. Add 🍅 tomatoes, 🥣 black beans, and 🥤 vegetable broth. Bring to a boil, then reduce heat to simmer.
  3. Blend for Creaminess (⏱️ 10 min):
    Using an immersion blender, partially blend the soup until it’s creamy but still has some chunks. Alternatively, blend half the soup in a blender and return it to the pot.
  4. Add Final Ingredients (⏱️ 5 min):
    Stir in 🌽 corn kernels and cook for an additional 5 minutes. Add 🍋 lime juice and adjust 🧂 salt and pepper to taste.
  5. Serve:
    Ladle into bowls and garnish with your favorite toppings like 🥑 avocado, 🌮 tortilla strips, or 🌿 cilantro.
