Minestrone Recipe

One of the staples of traditional Italian cuisine, minestrone is a soup made with seasonal vegetables. This peasant-style soup was prepared with a base of pureed beans or spelt and leftover contorni. Common ingredients include broth, onions, tomatoes, celery, carrots, and legumes.

Vegetable-Packed Minestrone Soup for Any Season

⏱️ Cooking Time: 45 minutes
⏱️ Total Time: 1 hour

Ingredients:

  • 🥕 2 carrots, diced
  • 🧅 1 onion, chopped
  • 🥬 2 celery stalks, chopped
  • 🥔 1 potato, diced
  • 🥫 1 can (400g) diced tomatoes
  • 🥣 1 cup vegetable broth
  • 🍝 1/2 cup small pasta or ditalini
  • 🫘 1 cup canned beans (kidney or cannellini), drained
  • 🧄 2 cloves garlic, minced
  • 🌿 1 tsp dried oregano
  • 🌿 1 tsp dried basil
  • 🫒 2 tbsp olive oil
  • 🧂 Salt and pepper to taste
  • 🌱 Grated Parmesan and fresh basil (optional, for garnish)

Instructions:

  1. Prepare the base: Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery until softened (5-7 minutes).
  2. Add vegetables and broth: Add potato, tomatoes, vegetable broth, oregano, and basil. Bring to a boil, then reduce heat and simmer for 25 minutes.
  3. Cook the pasta: Add pasta and beans to the pot and cook for 10 minutes, or until pasta is tender.
  4. Season and serve: Adjust seasoning with salt and pepper. Serve hot, garnished with Parmesan and fresh basil if desired.
