Ingredients:

  • 🐟 1 lb (450 g) white fish (cod, haddock, or halibut), cut into chunks
  • 🥔 2 medium potatoes, peeled and diced
  • 🧅 1 medium onion, finely chopped
  • 🥓 4 slices turkey bacon or beef bacon, chopped
  • 🥣 4 cups fish or seafood stock
  • 🥛 2 cups whole milk or heavy cream
  • 🌿 1 tsp fresh thyme leaves
  • 🌿 1 bay leaf
  • 🧂 Salt and black pepper to taste
  • 🥄 2 tbsp butter or olive oil
  • 🌿 Fresh parsley for garnish

Step-by-Step Instructions:

Serve
Ladle into bowls and serve with oyster crackers or crusty bread.

Cook the Bacon
In a large pot, cook the bacon over medium heat until crisp. Remove and set aside, leaving the rendered fat in the pot.

Sauté Aromatics
Add butter or olive oil to the pot (if needed). Sauté the onions until soft and translucent, about 5 minutes.

Add Potatoes and Stock
Stir in the diced potatoes, thyme, and bay leaf. Pour in the fish stock and bring to a boil. Reduce the heat and simmer until the potatoes are tender, about 15 minutes.

Add Fish
Add the fish chunks to the pot and simmer gently for 5–7 minutes, or until the fish is cooked through.

Stir in Milk or Cream
Gradually add the milk or heavy cream, stirring gently to combine. Heat through but do not boil to avoid curdling.

Season and Garnish
Season with salt and black pepper to taste. Remove the bay leaf. Garnish with parsley and the cooked bacon.
