- 🐟 1 lb (450 g) white fish (cod, haddock, or halibut), cut into chunks
- 🥔 2 medium potatoes, peeled and diced
- 🧅 1 medium onion, finely chopped
- 🥓 4 slices turkey bacon or beef bacon, chopped
- 🥣 4 cups fish or seafood stock
- 🥛 2 cups whole milk or heavy cream
- 🌿 1 tsp fresh thyme leaves
- 🌿 1 bay leaf
- 🧂 Salt and black pepper to taste
- 🥄 2 tbsp butter or olive oil
- 🌿 Fresh parsley for garnish

Cook the Bacon
In a large pot, cook the bacon over medium heat until crisp. Remove and set aside, leaving the rendered fat in the pot.
Sauté Aromatics
Add butter or olive oil to the pot (if needed). Sauté the onions until soft and translucent, about 5 minutes.
Add Potatoes and Stock
Stir in the diced potatoes, thyme, and bay leaf. Pour in the fish stock and bring to a boil. Reduce the heat and simmer until the potatoes are tender, about 15 minutes.
Add Fish

Stir in Milk or Cream
