Ingredients:

  • 🥣 2 cups pumpkin puree (fresh or canned)
  • 🍎 2 medium apples, peeled, cored, and chopped (e.g., Granny Smith or Honeycrisp)
  • 🥛 3 cups vegetable stock
  • 🧅 1 medium onion, chopped
  • 🧄 2 cloves garlic, minced
  • 🥄 1/2 tsp ground nutmeg
  • 🥄 1/2 tsp ground cinnamon
  • 🧂 Salt and pepper to taste
  • 🧈 2 tbsp butter or olive oil

Instructions:

  1. Sauté onion and garlic:
    🧈 Step 1: Heat butter or olive oil in a large pot over medium heat. Add chopped onion and sauté for 5 minutes until softened. Stir in minced garlic and cook for 1 minute.
  2. Cook apples:

  3. Add pumpkin and stock:
    🥣 Step 3: Stir in the pumpkin puree, vegetable stock, nutmeg, and cinnamon. Bring the mixture to a gentle boil, then reduce heat and simmer for 15 minutes.
  4. Blend the soup:
    🥄 Step 4: Use an immersion blender to puree the soup until smooth, or blend in batches with a countertop blender.
  5. Season and finish:
    🧂 Step 5: Season with salt and pepper to taste. Simmer for another 2 minutes to meld the flavors.
  6. Serve and garnish:
