Pumpkin and Tomato Soup Recipe
A Perfect Blend: Pumpkin and Tomato Soup

Ingredients:
- 🥣 2 cups pumpkin puree (fresh or canned)
- 🍅 2 cups chopped tomatoes (fresh or canned)
- 🥛 3 cups vegetable stock
- 🧅 1 medium onion, chopped
- 🧄 2 cloves garlic, minced
- 🥄 1 tsp basil (dried or fresh)
- 🧂 Salt and pepper to taste
- 🌿 Fresh cream or yogurt (optional, for garnish)
- 🧈 2 tbsp olive oil
Preparation Time:

- Total: ⏱️ 30 minutes
Instructions:
- Sauté onion and garlic:
🧈 Step 1: Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 5 minutes until softened. Add minced garlic and cook for 1 minute until fragrant. - Add tomatoes:
🍅 Step 2: Stir in the chopped tomatoes and basil. Cook for 5 minutes until the tomatoes break down and release their juices. - Incorporate pumpkin and stock:
🥣 Step 3: Add pumpkin puree and vegetable stock. Stir to combine and bring to a gentle boil. Reduce heat, cover, and simmer for 10 minutes. - Blend the soup:
🥄 Step 4: Use an immersion blender to puree the soup until smooth. Alternatively, blend in batches using a countertop blender and return to the pot. - Season and finish:
