Salmon Soup (Lohikeitto)

Ingredients:

  • 🐟 Salmon fillets – 500g, cut into bite-sized pieces
  • 🥔 Potatoes – 4 medium, peeled and diced
  • 🧅 Onion – 1 medium, chopped
  • 🧄 Garlic – 2 cloves, minced
  • 🧑‍🍳 Vegetable or fish broth – 4 cups
  • 🧈 Butter – 2 tbsp
  • 🧴 Heavy cream – 1 cup
  • 🌱 Dill – Fresh, chopped, for garnish
  • 🧂 Salt – to taste
  • 🌶️ Black pepper – to taste
  • 🍋 Lemon juice – 1 tbsp (optional, for extra flavor)

Instructions:

  1. Prepare the ingredients:
    • Peel and dice the potatoes. Chop the onion and garlic.
    • Cut the salmon into bite-sized pieces. Set aside.
  2. Sauté the onion and garlic:
    • In a large pot, melt the butter over medium heat.
    • Add the chopped onion and minced garlic, cooking until fragrant (about 3 minutes).
  3. Cook the potatoes:
    • Add the diced potatoes and broth to the pot. Bring to a boil.
    • Reduce the heat and simmer until the potatoes are tender (about 15 minutes).
  4. Add the salmon:
    • Add the salmon pieces to the pot and simmer gently for 5-7 minutes, until the salmon is cooked through.
  5. Add the cream and seasonings:
    • Pour in the heavy cream and stir gently.
    • Season with salt, black pepper, and a squeeze of lemon juice (optional) to taste.
  6. Garnish and serve:
    • Serve hot, garnished with freshly chopped dill.
