Salmon Soup (Lohikeitto)

Ingredients:
- 🐟 Salmon fillets – 500g, cut into bite-sized pieces
- 🥔 Potatoes – 4 medium, peeled and diced
- 🧅 Onion – 1 medium, chopped
- 🧄 Garlic – 2 cloves, minced
- 🧑🍳 Vegetable or fish broth – 4 cups
- 🧈 Butter – 2 tbsp
- 🧴 Heavy cream – 1 cup
- 🌱 Dill – Fresh, chopped, for garnish
- 🧂 Salt – to taste
- 🌶️ Black pepper – to taste
- 🍋 Lemon juice – 1 tbsp (optional, for extra flavor)
Instructions:
- Prepare the ingredients:
- Peel and dice the potatoes. Chop the onion and garlic.
- Cut the salmon into bite-sized pieces. Set aside.
- Sauté the onion and garlic:
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic, cooking until fragrant (about 3 minutes).
- Cook the potatoes:
- Add the diced potatoes and broth to the pot. Bring to a boil.
- Reduce the heat and simmer until the potatoes are tender (about 15 minutes).
- Add the salmon:
- Add the salmon pieces to the pot and simmer gently for 5-7 minutes, until the salmon is cooked through.
- Add the cream and seasonings:
- Pour in the heavy cream and stir gently.
- Season with salt, black pepper, and a squeeze of lemon juice (optional) to taste.
- Garnish and serve:
- Serve hot, garnished with freshly chopped dill.
