Ingredients:

  • 🍤 500g (1 lb) shrimp, peeled and deveined
  • 🌽 2 cups corn kernels (fresh, frozen, or canned)
  • 🥔 2 medium potatoes, peeled and diced
  • 🧅 1 medium onion, chopped
  • 🥕 1 medium carrot, chopped
  • 🧄 2 cloves garlic, minced
  • 🥛 3 cups seafood or vegetable stock
  • 🥄 1 cup heavy cream (or coconut milk for a dairy-free option)
  • 🧈 2 tbsp butter or olive oil
  • 🌱 1/2 tsp smoked paprika
  • 🌿 Fresh parsley or green onions for garnish
  • 🧂 Salt and pepper to taste

Preparation Time:

  • Prep: ⏱️ 15 minutes
  • Cooking: ⏱️ 30 minutes
  • Total: ⏱️ 45 minutes

Instructions:

  1. Sauté the vegetables:
    🧈 Step 1: Heat butter or olive oil in a large pot over medium heat. Add onion, carrot, and garlic. Sauté for 5 minutes until softened.
  2. Add potatoes and stock:
    🥔 Step 2: Add diced potatoes and seafood or vegetable stock. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potatoes are tender.
  3. Blend partially:
    🥣 Step 3: Use an immersion blender to puree about half of the soup, leaving some chunks for texture. (Alternatively, blend half the soup in a blender and return it to the pot.)
  4. Add corn and shrimp:
    🍤 Step 4: Stir in the corn and shrimp. Cook for 5-7 minutes until the shrimp turn pink and opaque.
  5. Finish with cream and seasoning:
    🥄 Step 5: Stir in the heavy cream and smoked paprika. Season with salt and pepper to taste. Heat gently without boiling.
  6. Serve:
    🍵 Step 6: Serve hot, garnished with chopped parsley or green onions.
