Step-by-Step Guide to Making Shrimp and Sweet Potato Soup

Ingredients:

  • 🍤 500g (1 lb) shrimp, peeled and deveined
  • 🍠 2 medium sweet potatoes, peeled and cubed
  • 🧅 1 medium onion, chopped
  • 🧄 2 cloves garlic, minced
  • 🌶️ 1/2 tsp smoked paprika
  • 🥛 4 cups vegetable or seafood stock
  • 🥄 1 cup coconut milk
  • 🌱 1 tbsp fresh cilantro or parsley, chopped
  • 🧈 2 tbsp olive oil
  • 🍋 1 tbsp fresh lime juice
  • 🧂 Salt and pepper to taste

Preparation Time:

  • Cooking: ⏱️ 30 minutes
  • Total: ⏱️ 40 minutes

Instructions:

  1. Sauté the onion and garlic:
    🧈 Step 1: Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic. Sauté for 3-4 minutes until softened.
  2. Add sweet potatoes and spices:
    🍠 Step 2: Stir in the sweet potato cubes and smoked paprika. Cook for another 2 minutes, stirring to coat the potatoes in the spices.
  3. Simmer the soup:
    🥣 Step 3: Pour in the vegetable or seafood stock. Bring to a boil, then reduce heat and let it simmer for 15-20 minutes, or until the sweet potatoes are tender.
  4. Blend the soup base:
    🥄 Step 4: Use an immersion blender to puree the soup until smooth (or blend in batches in a blender).
  5. Cook the shrimp:
    🍤 Step 5: Add the shrimp to the soup and simmer for 3-5 minutes, or until they turn pink and opaque.
  6. Add coconut milk and lime juice:
    🥛 Step 6: Stir in the coconut milk and lime juice. Adjust salt and pepper to taste. Heat gently without boiling.
  7. Serve:
