Shrimp Bisque Soup
Tips for the Perfect Shrimp Bisque Soup

🛒 Ingredients:
- 🧈 Butter: 2 tbsp
- 🧅 Onion: 1 medium, diced
- 🧄 Garlic: 3 cloves, minced
- 🥕 Carrot: 1 large, diced
- 🌿 Celery: 1 stalk, diced
- 🍤 Shrimp: 500g (peeled, deveined; keep shells for stock)
- 🥣 Fish or Vegetable Stock: 4 cups
- 🍅 Tomato Paste: 2 tbsp
- 🥛 Heavy Cream: 1 cup
- 🌿 Thyme: 1 tsp, fresh or dried
- 🌶️ Cayenne Pepper: A pinch (optional)
- 🧂 Salt and Pepper: To taste
- 🍋 Lemon Juice: 1 tbsp
- 🌿 Fresh Parsley: Chopped, for garnish
🕒 Instructions:
- Prepare Shrimp Stock (⏱️ 10 min):
- In a large pot, melt 1 tbsp of 🧈 butter over medium heat.
- Add shrimp shells, sauté until pink, and pour in 4 cups of water.
- Simmer for 10 minutes, strain, and set aside the stock.
- Sauté Aromatics (⏱️ 5 min):
- In the same pot, melt the remaining 🧈 butter.
- Add 🧅 onion, 🧄 garlic, 🥕 carrot, and 🌿 celery. Sauté until softened.
- Cook the Bisque Base (⏱️ 10 min):
- Stir in 🍅 tomato paste and 🌿 thyme, cooking for 2 minutes.
- Add shrimp stock and simmer for 10 minutes.
- Blend (⏱️ 5 min):
- Use an immersion blender or regular blender to purée the soup until smooth.
- Cook Shrimp and Finish (⏱️ 10 min):
- Return the puréed soup to the pot, add 🍤 shrimp, and cook for 5 minutes.
- Stir in 🥛 heavy cream, 🍋 lemon juice, and season with 🧂 salt, pepper, and 🌶️ cayenne (optional).
- Serve:
- Ladle into bowls and garnish with 🌿 fresh parsley.
