  • 🥔 2 medium potatoes (diced)
  • 🌽 1 cup corn kernels (fresh or frozen)
  • 🍅 2 tomatoes (diced)
  • 🧅 1 medium onion (chopped)
  • 🧄 2 garlic cloves (minced)
  • 🌱 1 zucchini (sliced)

Broth and Seasonings:

  • 🥣 6 cups vegetable broth
  • 🌿 1 tsp dried oregano
  • 🌶️ 1 small jalapeño (optional, sliced)
  • 🧂 Salt and pepper (to taste)
  • 🍋 1 lime (juiced)

Optional Garnishes:

  • 🌿 Fresh cilantro (chopped)
  • 🥑 Avocado slices
  • 🌽 Tortilla chips

Step-by-Step Instructions:

1. Sauté the Aromatics:

  • Heat a large pot over medium heat. Add a splash of oil and sauté the onion and garlic until fragrant and translucent.

2. Add Tomatoes and Vegetables:

  • Stir in the tomatoes and cook for 2–3 minutes until softened.
  • Add the carrots, potatoes, zucchini, and corn to the pot.

3. Simmer the Soup:

  • Pour in the vegetable broth, and add oregano, salt, and pepper.
  • Bring to a boil, then reduce the heat and simmer for 20–25 minutes, or until the vegetables are tender.

4. Add Lime Juice and Adjust Flavor:

  • Stir in the lime juice for a zesty kick. Taste and adjust seasoning as needed.
