A traditional Mexican soup from Michoacán, Sopa Tarasca is a delightful blend of smoky, savory, and hearty flavors. It’s made with pinto beans, tomatoes, and tortillas, creating a comforting and flavorful dish.


How to Make Sopa Tarasca at Home

Ingredients

🕒 Preparation Time: 10 minutes
🕒 Cooking Time: 30 minutes
🕒 Total Time: 40 minutes

  • 🌽 6 corn tortillas (cut into strips)
  • 🍅 4 medium tomatoes (roasted)
  • 🧄 2 garlic cloves
  • 🧅 1 medium onion (chopped)
  • 🌶️ 2 dried ancho chilies (seeded and soaked)
  • 🫘 1 cup cooked pinto beans
  • 🥣 4 cups chicken or vegetable broth
  • 🧂 Salt and pepper to taste
  • 🥑 Optional toppings: avocado slices, crema (sour cream), queso fresco, fried tortilla strips

Instructions

  1. Prepare the Tortilla Strips
    • Heat oil in a skillet over medium heat. Fry the tortilla strips until crispy and golden. Set them aside on paper towels to drain excess oil.
  2. Make the Soup Base
    • Blend the roasted tomatoes, garlic, onion, and soaked ancho chilies until smooth.
  3. Cook the Soup
    • In a large pot, heat a tablespoon of oil. Pour in the blended mixture and cook for 5–7 minutes, stirring occasionally. Add the pinto beans and broth. Simmer for 20 minutes.
  4. Season and Serve
    • Adjust salt and pepper to taste. Serve hot, garnished with crispy tortilla strips, avocado, crema, and queso fresco.
