How to Make Sopa Tarasca at Home
Ingredients

- 🌽 6 corn tortillas (cut into strips)
- 🍅 4 medium tomatoes (roasted)
- 🧄 2 garlic cloves
- 🧅 1 medium onion (chopped)
- 🌶️ 2 dried ancho chilies (seeded and soaked)
- 🫘 1 cup cooked pinto beans
- 🥣 4 cups chicken or vegetable broth
- 🧂 Salt and pepper to taste
- 🥑 Optional toppings: avocado slices, crema (sour cream), queso fresco, fried tortilla strips
Instructions
- Prepare the Tortilla Strips
- Heat oil in a skillet over medium heat. Fry the tortilla strips until crispy and golden. Set them aside on paper towels to drain excess oil.
- Make the Soup Base
- Blend the roasted tomatoes, garlic, onion, and soaked ancho chilies until smooth.
- Cook the Soup
- In a large pot, heat a tablespoon of oil. Pour in the blended mixture and cook for 5–7 minutes, stirring occasionally. Add the pinto beans and broth. Simmer for 20 minutes.
- Season and Serve
- Adjust salt and pepper to taste. Serve hot, garnished with crispy tortilla strips, avocado, crema, and queso fresco.
