  • 🥥 1 can (400ml) coconut milk
  • 🌶️ 2 tbsp Thai red curry paste
  • 🧄 3 garlic cloves, minced
  • 🧅 1 small onion, thinly sliced
  • 🥕 1 carrot, julienned
  • 🍄 100g mushrooms, sliced
  • 🍋 2 tbsp fish sauce
  • 🧂 1 tsp sugar
  • 🌿 Fresh cilantro, chopped (for garnish)
  • 🍋 Lime wedges (for serving)

Step-by-Step Instructions:

Step 1: Prepare the Aromatics

  1. Heat 1 tbsp oil in a large pot over medium heat.
  2. Add the minced garlic and sliced onion. Sauté until fragrant.

Step 2: Create the Base

  1. Stir in the Thai red curry paste and cook for 1 minute.
  2. Pour in the coconut milk and 2 cups of water, stirring to combine.

Step 3: Add Vegetables and Seasoning

  1. Add carrots, mushrooms, fish sauce, and sugar. Simmer for 5 minutes.

Step 4: Cook the Fish

  1. Gently add the fish chunks to the soup.
  2. Simmer for 8-10 minutes until the fish is cooked through and flakes easily.

Step 5: Garnish and Serve

Serve with lime wedges on the side for an extra burst of flavor.

Ladle the soup into bowls and garnish with fresh cilantro.
