Step-by-Step Instructions:
1. Prepare the Dried Beef:
- Soak the dried beef in warm water for 20–30 minutes to soften it.
- Drain, shred the beef into thin pieces, and set aside.
2. Sauté the Aromatics:
- Heat a drizzle of oil in a large pot over medium heat.
- Add onions and garlic, sauté until softened and translucent (about 5 minutes).
3. Build the Soup Base:
- Add the shredded beef to the pot, stirring well to combine with the onion mixture.
- Sprinkle in oregano, smoked paprika, and the bay leaf.
4. Add Broth and Potatoes:
- Pour in the broth and bring it to a boil.
- Add diced potatoes and reduce the heat to a simmer.
