  • 🥔 3 medium potatoes (peeled and diced)
  • 🧄 2 garlic cloves (minced)
  • 🌱 1 tsp dried oregano
  • 🌶️ 1 tsp smoked paprika
  • 🍃 1 bay leaf
  • 🥣 6 cups beef or vegetable broth
  • 🧂 Salt and pepper (to taste)

For Serving:

  • 🌱 Fresh cilantro or parsley (chopped)
  • 🍋 Lime wedges or vinegar (optional for tang)

Step-by-Step Instructions:

1. Prepare the Dried Beef:

  • Soak the dried beef in warm water for 20–30 minutes to soften it.
  • Drain, shred the beef into thin pieces, and set aside.

2. Sauté the Aromatics:

  • Heat a drizzle of oil in a large pot over medium heat.
  • Add onions and garlic, sauté until softened and translucent (about 5 minutes).

3. Build the Soup Base:

  • Add the shredded beef to the pot, stirring well to combine with the onion mixture.
  • Sprinkle in oregano, smoked paprika, and the bay leaf.

4. Add Broth and Potatoes:

  • Pour in the broth and bring it to a boil.
  • Add diced potatoes and reduce the heat to a simmer.
  • Cook for 20 minutes or until the potatoes are tender.

5. Adjust Seasoning:

  • Taste the soup and adjust the salt and pepper as needed.
  • Add a splash of lime juice or vinegar for a tangy flavor if desired.
6. Serve:
  • Ladle the soup into bowls, garnish with fresh cilantro or parsley, and enjoy hot.
