Ingredients:

Vegetables:

  • 🥕 2 medium carrots (sliced)
  • 🧅 1 medium onion (chopped)
  • 🥬 2 celery stalks (chopped)
  • 🥔 1 medium sweet potato (diced)
  • 🍄 1 cup mushrooms (sliced)

Grains and Broth:

  • 🥣 1/2 cup wild rice (uncooked)
  • 🥫 6 cups vegetable broth

Spices and Herbs:

  • 🧄 2 garlic cloves (minced)
  • 🌿 1 tsp dried thyme
  • 🌿 1/2 tsp dried rosemary
  • 🧂 Salt and pepper (to taste)

Optional Additions:

  • 🫒 2 tbsp olive oil
  • 🌿 Fresh parsley (for garnish)

Step-by-Step Instructions:

1. Sauté the Aromatics:

  • Heat olive oil in a large pot over medium heat.
  • Add the onion, garlic, carrots, and celery. Sauté for 5 minutes until softened.

2. Add Sweet Potato and Mushrooms:

  • Stir in the sweet potato and mushrooms, cooking for another 3–4 minutes.

3. Add Spices and Broth:

  • Sprinkle thyme and rosemary over the vegetables.
  • Add the wild rice and pour in the vegetable broth.

4. Cook the Soup:

  • Bring the soup to a boil, then reduce the heat to low.
  • Cover and simmer for 35–40 minutes, or until the wild rice is tender and the vegetables are cooked through.

5. Season and Serve:

  • Add salt and pepper to taste.
  • Ladle the soup into bowls and garnish with fresh parsley.
