- 🧅 1 medium onion (chopped)
- 🥬 2 celery stalks (chopped)
- 🥔 1 medium sweet potato (diced)
- 🍄 1 cup mushrooms (sliced)
Grains and Broth:
- 🥣 1/2 cup wild rice (uncooked)
- 🥫 6 cups vegetable broth
Spices and Herbs:
- 🧄 2 garlic cloves (minced)
- 🌿 1 tsp dried thyme
- 🌿 1/2 tsp dried rosemary
- 🧂 Salt and pepper (to taste)
Optional Additions:
- 🫒 2 tbsp olive oil
- 🌿 Fresh parsley (for garnish)
Step-by-Step Instructions:
1. Sauté the Aromatics:
- Heat olive oil in a large pot over medium heat.
- Add the onion, garlic, carrots, and celery. Sauté for 5 minutes until softened.
2. Add Sweet Potato and Mushrooms:
- Stir in the sweet potato and mushrooms, cooking for another 3–4 minutes.
3. Add Spices and Broth:
- Sprinkle thyme and rosemary over the vegetables.
- Add the wild rice and pour in the vegetable broth.
4. Cook the Soup:
- Bring the soup to a boil, then reduce the heat to low.
- Cover and simmer for 35–40 minutes, or until the wild rice is tender and the vegetables are cooked through.
5. Season and Serve:
- Add salt and pepper to taste.
- Ladle the soup into bowls and garnish with fresh parsley.
