Ingredients
- 🥔 4 medium-sized potatoes (peeled and diced)
- 🧅 2 leeks (white and light green parts only, cleaned and sliced)
- 🧄 2 cloves garlic (minced)
- 🧈 2 tbsp unsalted butter
- 🥣 4 cups chicken or vegetable stock
- 🥛 1 cup heavy cream (or half-and-half for a lighter option)
- 🧂 Salt and white pepper to taste
- 🌿 Fresh chives (finely chopped, for garnish)
Step-by-Step Instructions
- Prepare the Ingredients
- Peel and dice the potatoes.
- Slice the leeks lengthwise, rinse thoroughly to remove dirt, and slice thinly.
- Mince the garlic.
- Sauté the Aromatics
- In a large pot, melt the butter over medium heat.
- Add the leeks and garlic, and sauté for 5-7 minutes until softened but not browned.
- Cook the Potatoes
- Add the diced potatoes to the pot.
- Pour in the chicken or vegetable stock.
- Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the potatoes are tender.
- Blend the Soup
- Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until silky.
- Add Cream
- Stir in the heavy cream.
- Season with salt and white pepper to taste.
- Cool the Soup
- Let the soup cool to room temperature, then refrigerate until chilled.
- Serve and Garnish
- Serve the soup cold in bowls.
- Garnish with finely chopped chives for a touch of freshness.
