Ingredients

  • 🥔 4 medium-sized potatoes (peeled and diced)
  • 🧅 2 leeks (white and light green parts only, cleaned and sliced)
  • 🧄 2 cloves garlic (minced)
  • 🧈 2 tbsp unsalted butter
  • 🥣 4 cups chicken or vegetable stock
  • 🥛 1 cup heavy cream (or half-and-half for a lighter option)
  • 🧂 Salt and white pepper to taste
  • 🌿 Fresh chives (finely chopped, for garnish)

Step-by-Step Instructions

  1. Prepare the Ingredients
    • Peel and dice the potatoes.
    • Slice the leeks lengthwise, rinse thoroughly to remove dirt, and slice thinly.
    • Mince the garlic.
  2. Sauté the Aromatics
    • In a large pot, melt the butter over medium heat.
    • Add the leeks and garlic, and sauté for 5-7 minutes until softened but not browned.
  3. Cook the Potatoes
    • Add the diced potatoes to the pot.
    • Pour in the chicken or vegetable stock.
    • Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the potatoes are tender.
  4. Blend the Soup
    • Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until silky.
  5. Add Cream
    • Stir in the heavy cream.
    • Season with salt and white pepper to taste.
  6. Cool the Soup
    • Let the soup cool to room temperature, then refrigerate until chilled.
  7. Serve and Garnish
    • Serve the soup cold in bowls.
    • Garnish with finely chopped chives for a touch of freshness.
