Easy Homemade Wedding Soup with Meatballs

Ingredients 🛒

  • 🥩 Meatballs:
    • 500g ground beef or chicken
    • ½ cup breadcrumbs
    • 1 egg 🥚
    • 2 tbsp grated Parmesan cheese 🧀
    • 1 clove garlic, minced 🧄
    • 1 tbsp fresh parsley, chopped 🌿
    • Salt & pepper to taste
  • 🍲 Soup Base:
    • 1 tbsp olive oil 🫒
    • 1 onion, finely chopped 🧅
    • 2 carrots, diced 🥕
    • 2 celery stalks, diced
    • 6 cups chicken broth 🍗
    • ½ cup small pasta (orzo, acini di pepe, or ditalini)
    • 2 cups baby spinach or escarole 🌱
    • Grated Parmesan for garnish 🧀

Step-by-Step Instructions

1️⃣ Prepare the Meatballs

  1. In a large bowl, combine the ground meat, breadcrumbs, egg, Parmesan, minced garlic, parsley, salt, and pepper.
  2. Mix well and shape into small, bite-sized meatballs. Set aside.

2️⃣ Sauté Vegetables

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion, carrots, and celery. Cook for 5 minutes, stirring occasionally, until softened.

3️⃣ Simmer the Soup Base

  1. Pour the chicken broth into the pot and bring it to a boil.
  2. Reduce heat to low, add the meatballs carefully, and simmer for 10 minutes.

4️⃣ Cook the Pasta and Greens

  1. Add the pasta to the pot and cook according to package instructions (usually 6-8 minutes).
  2. In the last 2 minutes, stir in the baby spinach or escarole.

5️⃣ Serve and Enjoy

  1. Ladle the soup into bowls, sprinkle with grated Parmesan cheese, and serve hot.
