Easy Homemade Wedding Soup with Meatballs

Ingredients 🛒
- 🥩 Meatballs:
- 500g ground beef or chicken
- ½ cup breadcrumbs
- 1 egg 🥚
- 2 tbsp grated Parmesan cheese 🧀
- 1 clove garlic, minced 🧄
- 1 tbsp fresh parsley, chopped 🌿
- Salt & pepper to taste
- 🍲 Soup Base:
- 1 tbsp olive oil 🫒
- 1 onion, finely chopped 🧅
- 2 carrots, diced 🥕
- 2 celery stalks, diced
- 6 cups chicken broth 🍗
- ½ cup small pasta (orzo, acini di pepe, or ditalini)
- 2 cups baby spinach or escarole 🌱
- Grated Parmesan for garnish 🧀
Step-by-Step Instructions
1️⃣ Prepare the Meatballs
- In a large bowl, combine the ground meat, breadcrumbs, egg, Parmesan, minced garlic, parsley, salt, and pepper.
- Mix well and shape into small, bite-sized meatballs. Set aside.
2️⃣ Sauté Vegetables
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion, carrots, and celery. Cook for 5 minutes, stirring occasionally, until softened.
3️⃣ Simmer the Soup Base
- Pour the chicken broth into the pot and bring it to a boil.
- Reduce heat to low, add the meatballs carefully, and simmer for 10 minutes.
4️⃣ Cook the Pasta and Greens
- Add the pasta to the pot and cook according to package instructions (usually 6-8 minutes).
- In the last 2 minutes, stir in the baby spinach or escarole.
5️⃣ Serve and Enjoy
- Ladle the soup into bowls, sprinkle with grated Parmesan cheese, and serve hot.
