Ingredients:

  • 🐔 200g chicken breast (cooked and shredded)
  • 🌽 1 cup corn kernels (fresh, canned, or frozen)
  • 🥕 1 carrot (grated)
  • 🧅 1 small onion (finely chopped)
  • 🧄 2 cloves garlic (minced)
  • 🥣 4 cups chicken stock
  • 🌿 2 tbsp fresh parsley (chopped, for garnish)
  • 🥄 2 tbsp soy sauce
  • 🌽 2 tbsp cornstarch (mixed with 3 tbsp water)
  • 🥚 1 egg (lightly beaten)
  • 🧂 Salt and pepper (to taste)
  • 🥄 1 tbsp sesame oil

Step-by-Step Instructions:

1. Prepare the Base:

  • Heat sesame oil in a large pot over medium heat.
  • Add onion and garlic, sauté for 2-3 minutes until fragrant and soft.

2. Build the Soup:

  • Add the chicken stock, grated carrot, and soy sauce to the pot.
  • Bring the mixture to a boil, then reduce to a simmer.

3. Cook the Ingredients:

  • Stir in the corn kernels and shredded chicken. Cook for 10 minutes to allow the flavors to meld.

4. Thicken the Soup:

  • Gradually stir in the cornstarch slurry, allowing the soup to thicken slightly.
  • Drizzle the beaten egg slowly into the soup while stirring gently to create silky strands.
5. Season and Serve:
  • Taste and adjust seasoning with salt and pepper.
  • Ladle into bowls, garnish with fresh parsley, and enjoy!
